TO THE EYE: The robe is a deep gold with flashes of copper.
ON THE NOSE: A resonance of candied fruits (mirabelle, quince, pomelo) initially dominates, followed by a floral bouquet of jasmine, sage and laurel. Swirled in the glass, a rich, luscious profile emerges with notes of brioche, gingerbread, liquorice and mocha.
ON THE PALATE: The attack is massive and exuberant with a rich mouthfeel as notes of chocolate, candied ginger, and aged rum forge a silkiness and a persistent finish.
FOOF AND WINE PAIRING
To echo this luscious texture, it is best to focus on the cooking method rather than specific ingredients: go for stews or simmered dishes.
A tagine with prunes, a fowl supreme with liquorice cooked at low temperature, a terrine of fowl with ceps.
Some well-selected cheeses can also form an excellent pairing: an aged Morbier, a Saint Nectaire or a Salers.
